Vegan Sweet Potato Quesadillas with a healthy filling

The great thing about this recipe is that you can vary the fillings as you like. You can make them with vegan cheese only or add your favorite veggies. I like them best with a sweet potato, black bean and corn mix which is super quick to make. Also, I like to add fresh herbs and greens, such as spinach, for extra vitamins. This filling is definitely my favorite combination for vegan quesadillas. It’s packed with healthy ingredients, contains plant-based protein from beans and it’s really so delicious you will likely want to use it for all sorts of other things. Topped with guacamole and vegan cheese these Vegan Sweet Potato Quesadillas are totally divine.

Serve with different Dips

These Vegan Sweet Potato Quesadillas taste delicious on their own, but they‘re even better when served with Dips, such as Guacamole, creamy Cashew Dip and Hummus. There are many people who like adding avocado as filling. Honestly, I don’t like baked avocado so much but feel free to add it also as filling. I like a simple creamy green guacamole with flavorful garlic and a splash of squeezed lime + sea salt and black pepper best!

Ingredients

For the Filling:

  • 1-2 tbsp olive oil
  • 1 sweet potato (about 9 oz) grated
  • 1 tsp smoked paprika
  • ½ tsp chili (optional)
  • ½ tsp cumin (optional)
  • 1 handful of baby spinach
  • 1 cup black beans cooked or canned
  • ½ cup corn cooked or canned
  • 2-3 tbsp fresh parsley chopped
  • salt, pepper to taste

For the Quesadillas:

  • 6 (gluten-free) tortillas* about 7.5-inch
  • 1 cup vegan cheese grated
  • 3 tsp oil

Instructions

*Note: Check out the recipe video + step-by-step pictures above!

    Sweet Potato Filling:

    • Heat the oil in large skillet over medium heat. Add the grated sweet potato and roast for 30 seconds. Then add the spices and stir to combine.

    • Once the pan is sizzling, add a little bit of water, then cover the pan and reduce heat to low to avoid burning the contents. Cook for about 6 minutes, stirring occasionally.

    • Add baby spinach, stir to combine and cook for about further 2 minutes, until the sweet potato is tender and cooked through.

    • Stir in beans, corn, and parsley and cook for 1 minute longer, or until heated through. Season with salt and pepper to taste.

    Quesadillas (see step-by-step photos):

    • Heat a non-stick pan over medium heat and brush with a little bit of oil.

    • Spread about 3 tbsp of the filling evenly over half of 1 tortilla, leaving an ½-inch border. Cover filling with grated cheese and fold over the empty side of the tortilla, pressing down carefully by using a spatula, so that it sticks a little. (You can place 2 folded tortillas at a time in the pan).

    • Cook for about 2-3 minutes, flip and cook from the other side until golden and crispy.

    • Repeat with remaining filling and as many tortillas as needed (about 4-6, depending on the exact size).

    • Transfer quesadillas to a cutting board. Slice each quesadilla into three even wedges using a sharp knife or pizza cutter.

    • Serve immediately, with guacamole or other dips of choice. Enjoy!

    Notes

    • Make this recipe gluten-free by using gluten-free tortillas.
    • Leftover quesadillas can be wrapped and stored in the refrigerator for a few days. Simply reheat in the microwave or in the oven before serving.

    FAQs

How do you make quesadillas that don't fall apart? ›

Only use about two heaping tablespoons of filling per large tortilla. Prepping your filling ahead of time is a good idea, making sure there's equal parts cheese to protein and/or vegetable. You want to use enough cheese because it will hold the whole thing together. Too little, and your filling will fall out.

How to make a quesadilla with two tortillas? ›

Just dab a little cooking oil on one tortilla, rub it against another and drop them both on the grill. Cover them with grated cheese and whatever filling you like. Wait a few minutes for the cheese to melt and the tortilla to brown and become crispy, then fold them in half, cut them in half and serve.

How to make a soggy quesadilla crispy? ›

Preheat your oven to 325 degrees Fahrenheit. Place the quesadilla on a baking sheet lined with aluminum foil. Bake for 10 minutes or until the tortilla is crisp and the cheese is melted throughout. Serve with a side of salsa, sour cream, and/or guacamole for dipping.

    What makes a quesadilla? ›

What makes a quesadilla a quesadilla is the use of a tortilla and cheese. The tortilla is traditionally made of corn, although some modern variations use flour tortillas. The cheese is usually melted inside the tortilla, and additional fillings such as meat, vegetables, or beans can be added.

How to stop quesadillas from going soggy? ›

You will need only about ½ teaspoon of butter or oil; avoid using too much, or your quesadilla will become too soggy. If using oil, try going for a lighter oil, such as canola or vegetable oil; olive oil will give the quesadilla too strong of a flavor.

What is the best cheese for quesadillas? ›

Sometimes the best cheese for quesadillas is whatever you have in the fridge when the craving strikes. Cheddar and Monterey Jack are standards of American-style quesadillas. But if you are planning ahead, consider that freshly grated cheese such as cheddar or Monterey Jack makes the meltiest quesadillas.

What is the hack for quesadillas? ›

Simply slice a tortilla halfway through, add different fillings to each of the four quadrants, do some folding, brown it in a pan and voilà! You have a delicious, healthy lunch ready in minutes.

How to seal the edges of a quesadilla? ›

How do you seal the edges of quesadillas? While the melted cheese should be more than enough to keep your quesadilla together, some prefer tightly sealed edges that prevent even the smallest amount of filling from escaping. To achieve this, simply dampen the edges of the tortilla with a bit of water before folding it.

What is cheese between two tortillas called? ›

You may think of a quesadilla as cheese melted between two pre-cooked flour tortillas—an acceptable way to make this authentic Mexican antojito (snack).

Do you cook quesadillas on high or low heat? ›

Ironically, the key to a crispy quesadilla is less fat in the pan, not more. Too much fat will make your quesadilla soggy instead of crispy. Use just enough to coat the bottom of your skillet — about 1/2 teaspoon of butter or oil. Warm it in the skillet over medium to medium-high heat.

Should I use butter or oil for quesadillas? ›

I opt for butter over oil whenever possible, but this is one case where oil is better: Butter contains water, which means that your quesadillas will turn out damp and floppy. Oil is pure fat, so it browns tortillas impeccably, resulting in pleasantly crispy spots on the outside of your quesadilla.

What does dilla mean in quesadillas? ›

You might be wondering where this tasty treat called the quesadilla found its well-known name? Well, queso means cheese in Spanish, and Dilla means a slang term for a dude. So quesadilla translates into “cheese-dude.” This little cheese thing was originated in the northern and central Mexico back in the 16th century.

What is a quesadilla without cheese called? ›

Interestingly, Anais points out that a quesadilla without cheese in Oaxaca is called an 'empanada', which could be a surprise for people used to baked or fried hand pies with filling.

What is a good side dish for quesadillas? ›

Side dishes—like fresh salsa, pickled onions, and beans—add flavor to your quesadillas. And, they also add more veggies and protein to the meal. These are our favorite sides to pair with quesadillas.

How to get a quesadilla to stay together? ›

And make sure there is cheese swathing your add-ons on both sides. Cheese is the glue holding your quesadilla together, and if you fail to sprinkle some beneath and on top of your other ingredients, your quesadilla will fall apart.
